Vendor Spotlight: Prairie Smoke and Spice BBQ

Rob and Val began this adventure twenty years ago when Rob took up smoking meat as a hobby. Two decades later barbeque is Rob's full-time gig with a seriously successful family business serving catered events and parking their food truck everywhere from the RFM to major BBQ competitions across North America. They also run Canada’s largest BBQ school! In 2020 they hosted twenty two classes all over Canada, teaching their techniques to over 400 students.
Most recently, Rob showed his skills on an episode of the popular Food Network grilling show Fire Masters!
If you haven't had the chance to try their BBQ, you can trust the line-up at their truck every market! From overnight smoked brisket to their signature "Cup ‘o ‘Que" — a BBQ parfait with pit beans, pulled pork, and their Apple Cider Slaw — they serve must-try local food!
As for how they ended up at our market, Rob says they shopped at the market a decade before they got into the local food business, "I’ve always loved fresh food and hand made products. Once we had a food truck is seemed like a natural fit."
Rob says his current personal favourite product is their new "Steak Shake" steak rub. "It was a pandemic project while I had time at home to do the necessary research and development and product trials." They sell all kinds of rubs and sauces, and right now they're working on an unreleased sweet honey pork rub for ribs and pulled pork!
One of their more recent successes has been switching to entirely environmentally friendly packaging for their foods. "We also collect cans and recycling as much as possible, and give the money back to our employees for fun events," Rob said.
